chilli recipe

Makes about 6 portions.

Cadence Preparation Time®: about an hour.

equipment

  • 2 saucepans
  • Frying pan (needs fairly high sides)
  • Wooden spoon
  • Big sharp knife
  • Chopping board

ingredients

  • Rice (2 cups)
  • Lentils (250 grams)
  • Onion (1 or 2)
  • Garlic (1 bulb)
  • Capsicum (1)
  • Chopped tomatoes (2 tins = 800 grams)
  • Chilli beans (2 tins = 840 grams)
  • Baking soda (1/4 teaspoon)
  • Stock or stock cubes (2 cubes) (I recommend beef flavoured)
  • Oregano
  • Cheese
  • Your favourite vegetables. I suggest:
    • Carrot
    • Spinach
    • Green beans
  • Your favourite spices. I suggest:
    • Smoked paprika (2 teaspoons)
    • Ground chipotle (1 teaspoon)
    • Chilli flakes (1 teaspoon)
    • Curry powder (1 teaspoon)
    • Cumin seeds (1 teaspoon) (grind before using)
    • Cayenne pepper (1/2 teaspoon)
    • Cinnamon (1/2 teaspoon)

instructions

rice

  1. Put 2 cups brown rice in the saucepan.
  2. Boil 4 cups of water and put it in the saucepan.
  3. Put a lid on the saucepan.
  4. Set the hob to medium heat. After about 10 minutes, it will be bubbling happily. If the bubbles push past the lid and run down the sides of the saucepan, the heat is too high. If there are no bubbles, the heat is too low.
  5. After about 40 minutes, the surface level of water will be gone, but bubbles will continue to escape up through the layer of rice, making holes like worms.
  6. After a few more minutes, there won't be any bubbles at all, and you should turn off the heat now, otherwise it'll burn.

lentils

  1. Put 250 grams of lentils in a saucepan.
  2. Fill the saucepan with cold water and stir, it will look murky.
  3. Carefully pour away the water without losing the lentils. (Tip: Make a small gap between saucepan and lid to pour water through.)
  4. Repeat this 4 times. You'll notice the water becoming less murky with each repetition.
  5. Cover the lentils with boiled water and put it on the hob on medium-high heat. The water will boil off, taking about 10 minutes.
  6. When you can't see any more water, the lentils will look swollen and fluffy, and you should turn off the heat now, otherwise it'll burn.

chilli

  1. Put a frying pan on the hob on high heat.
  2. Peel and chop 1 onion and 1 bulb of garlic. Put oil in the frying pan. Put them in. While you complete the next step, stir often so that it doesn't burn.
  3. Chop a capsicum. Put it in. Wait 2 minutes while stirring.
  4. Add 2 tins (800 grams) chopped tomatoes. Reduce to medium heat: it should still be allowed to bubble if left alone, but not vigorously.
  5. Once the lentils are done, add the lentils. Wait 2 minutes for everything to heat up.
  6. Add 1/4 teaspoon of baking soda and stir well.
  7. Add stock or stock cubes.
  8. Add 2 tins (840 grams) chilli beans.
  9. Add your favourite spices.
  10. Add your favourite vegetables.
  11. Let it continue to cook, stirring every few minutes so that it doesn't stick and burn. Wait for the rice to be done cooking. (Should be about 20-30 minutes at this point.)
  12. Taste it, and if it's not spicy enough, add more ground chipotle.
  13. Add oregano. Try to cover 1/4 of the saucepan area with a light dusting, but if you add too much, it'll all just taste like oregano. Less is more - a little goes a long way.
  14. Serve with cheese. You can add salt and pepper too.

  6. Let him cook. when the rice is done the meal is done.
  7. Serve with oregano and cheese.
